FOUR PILLARS GIN

 

Until recently you wouldn’t have looked twice as you passed the corner of Lilydale Rd and the Maroondah Highway in Healesville.
Now the new site of Four Pillars distillery, it’s a landmark new destination in the Yarra Valley. The formidable trio of Matt Jones, Stuart Gregor and Cameron Mackenzie launched their first limited release of Rare Dry Gin in December 2013 after years of research
and experimentation. 

The guys bring together a collection of skills and a love of quality gin that make Four Pillars the brand it is. With the original intentions of startinga boutique tonic brand proving too difficult, their loyal following are thankful they chose to have a go at gin instead. Blossoming from its humble beginnings in a shared shed at Rob Dolan’s Winery in Warrandyte, the team now work in a 700 square metre converted timber yard from the 1980’s. 

The name Four Pillars stems from the four foundations of the product, 1. The Still – essential in the unique production of the gin
2. Water – triple filtered Yarra Valley water 3. Botanicals - Using native botanicals including Tasmanian pepperberry and whole oranges and the exotic Asian spices range from cinnamon and star anise to cardamom and coriander seeds 4. Love - A commitment to craft and attention to detail every step of the way.

The distillery has an arsenal of three copper pot stills crafted in Stuttgard, Germany by CARL, considered the finest manufacturers
in the industry having produced only 25 per year since 1869.

The trio of stills are named after the founders mothers Wilma, Jude and Eileen all making different batches and styles of gin. With best sellers Rare Dry and the bold Navy Strength rolling out the door, their Spiced Negroni batch has been a hit – served at Meletos with Campari and Australian Vermouth brand Maidenii. On top of these staples will be the exciting line of ‘Gin-ventions’; experimental batches made in the smaller Eileen still, including Barrel Aged and Bloody Shiraz Gin. Also keep an eye out for their limited runs of marmalades made in collaboration with Cunliffe & Water from the organic whole oranges used in the distillation of the gin.
