Four Pillars Gin Distillery
The team Four Pillars bring a modern Australian sensibility to the process of distillation with a focus on rare and native botanicals.
The distillery houses an original copper still called Wilma and her two new siblings, Jude and Eileen. All three of the stills are manufactured by Carl in Germany and deliver unbelievable purity of spirit, drawing extraordinary botanical flavour. From Rare Dry Gin to Barrel Aged Gin to Navy Strength Gin to Orange Marmalade (made with the oranges that make the gin) everything Four Pillars does is designed to elevate the craft of distilling in Australia, and they must be doing something right - Four Pillars has been awarded a Double Gold, Gold or Master status for all of their mainstay gins in the past two years!
TarraWarra Estate is best known for exceptional Pinot Noir and Chardonnay, alongside other single-block heritage varietals and estate blends. Their wines express the unique terroir of the TarraWarra Estate site, which is comprised of 28 individual blocks and planted with carefully selected clones, each of which contributes distinctive characteristics to our wines. Under the watchful eye of winemaker Clare Halloran, all of TarraWarra Estate’s wines are meticulously grown, handpicked, vinified and aged on the estate.
No.7 Healesville encompasses a state-of-the-art communal urban winery, restaurant, wine bar and event space dedicated to fostering the next generation of Australian winemakers. As access to winemaking facilities and equipment for wine analysis becomes increasingly expensive and difficult for young winemakers, an idea was formed by the family behind Stones of the Yarra Valley and Meletos to provide a facility for new winemakers to produce small batch wine in a professional and supportive environment. The restaurant, under the helm of Head Chef Joel Bowers, reflects a commitment to community, seasonality and outstanding food and wine pairings.
Pimpernel Vineyards is a family run winery creating elegant, individual wines with an emphasis on traditional winemaking techniques. Inspired by the great wines and traditions of Burgundy and the Rhône Valley, their wines aim to offer an expression of their unique terroir. Wines are produced with fruit grown on the Pimpernel estate and varieties range from Yarra Valley classics like Pinot Noir, Chardonnay and Shiraz, to more eclectic varietals including Marsanne, Mouvedre and Muscat of Alexandria. Through the combination of dry land cultivation techniques and minimal intervention winemaking, Pimpernel Vineyards produces intensely flavoured wines that express the site and its climate.
